This additional funding will be provided to David Beattie for Part 2: R&D for the  Bó Mhór project. Collaborating with local communities, universities, industries, farmers and professionals across South Dublin County Council, we envisage that this work exploring the use of and the level of wastage of milk with it's effect on the water table and the wider environment is very extensive. David is planning to run workshops in cheese and yogurt making in the local community as part of this explorative work.
